5 Tips to Increase Outdoor Dining in Colder Months

The fall and winter months mark the beginning of the slower season for many restaurants that rely on outdoor areas to expand their seating. However, outdoor dining may be a necessity to remain in business during the pandemic, amid dining room restrictions spreading again nationwide.

The truth is, many people prefer to dine outdoors—even when the weather is cooler. So, how can restaurants increase their capacity and keep customers happy?

Alfresco dining is popular in Europe, yet many US-based businesses haven't quite figured out how to make it work. People have plenty of dining options, and making delicious food isn't always enough to keep customers coming back. Creating an outdoor dining experience could be just what your restaurant needs to become a top dining choice in your area.

Here are a few tips to improve the outdoor dining experience, inspired by restaurants worldwide.

1. Get Creative With Outdoor Space

Think you don't have anywhere to add outdoor dining? Consider adding two-seater tables to the sidewalk outside your building, blocking off a few parking spots, using a rooftop, or even using a shared courtyard, like the one at this bar in Chicago

Aim for smaller tables that require less space, and add elements to make outdoor dining more appealing. For example, a free (or reduced) glass of wine, live music, a beautiful mural, or a nice view may tempt more diners to try eating in the great outdoors.

2. Keep Them Warm and Cozy

Colder temperatures don't mean you need to pack up those patios just yet. Instead of packing up, look for ways to keep customers warm, even when the temperatures dip down. For example, many restaurants on the Chicago Riverwalk use domes to keep diners warm and cozy despite freezing temperatures.

Outdoor gas heaters and fire pits can also offer protection from the elements while creating a cozy dining experience. Keep in mind that burning actual wood in your fireplace might be against fire code and can leave customers smelling like a campfire, so look for a gas fireplace instead.

3. Create a Fun Atmosphere to Keep Customers Coming Back

Dining outside doesn't have to feel like an afterthought. Make it an experience that customers will come back for by adding plants, comfortable chairs, and seasonal decorations. For example, add pumpkins and mums for the fall and poinsettias for the holidays.

Other ideas to make outdoor dining feel special include candles, soft music, twinkle lights, art, and couches rather than the standard chairs and tables.

4. Offer Patio-Only Specials on Food and Drinks

There are few things diners like better than a discounted meal. Offer outside diners a free appetizer, a discount on their first drink, or even patio-only menu items. For example, you might offer a popular seasonal dinner like turkey and trimmings—but only for diners who sit on the patio.

The purpose of these specials is to lend an air of exclusivity to the patio and tempt more people to give your outdoor dining a chance.

5. Host Live Events Outside

Live events may be limited in size due to COVID-19, but they can still be used to draw in diners. For example, consider hosting a weekly movie night. Diners can come to eat, drink, and watch a holiday movie with their friends. You could also show popular television shows, host a trivia night, or have a paint-and-sip party. Focus on finding a way for people to have fun while staying warm and safe.

Final Thoughts

The weather may be getting colder, but that doesn't mean you have to close up your restaurant patio just yet. Instead, find ways to create a fun, warm, and cozy experience that will keep customers coming back for more.
